Gnocchi with Chef Matt

1 quart of flour

(1) 48oz container of ricotta

1 whole egg

2 egg yolks (separate)

Squeeze ingredients together until mixed. Separate a hand/spoonful. Sprinkle with flour. Roll out evenly. Cut. Drop into boiling water. When the gnocchi start to float, leave for 30 more seconds. Scoop/drain. Drizzle with olive oil. Top with red sauce, white sauce, pesto…whatever your heart desires.
